Food sustainability and local produce is a key focus for the chef and his team across his venues in Scotland. This Q&A will be a relaxed and interactive session which Dean will give an insight to how his teams deliver sustainability in his businesses along with discussing the local producers which he uses both personally and within his restaurants.
